Upside Down Chicken Pot Pie


1 Baked Potato Soup Mix
6 cups water
16 oz frozen vegetables
14 oz can of diced potatoes
3 cups cooked chicken, cubed
4 round bread loaves


  1. Combine soup mix with water; bring to a boil and reduce to a simmer. Add potatoes, vegetables, and chicken. Simmer for 15 minutes stirring frequently.
  2. Meanwhile, prepare bread bowls. Cut off the top half of the bread bowl using a serrated knife. Hollow out the inside of the loaf, leaving about 1 inch on each side. Optional: brush with oil and toast in the oven until golden.
  3. Fill each bread bowl with soup and enjoy!
