Southwest Zucchini Boats
Ingredients
| 1 | Santa Fe Cheeseball & Appetizer Mix |
| 4 | medium zucchini |
| 2 Tbs | olive oil |
| 1 can | black beans, rinsed |
| 1 can | corn, drained |
| 1 cup | sour cream |
| 1/2 cup | shredded cheese |
Directions
1. In a mixing bowl combine beans, corn and sour cream.
2. Add Santa Fe Mix packets 1 and 2; stir until well combined and set aside.
3. Cut zucchini in half horizontally, then scoop out the flesh.
4. Place on a baking sheet scooped side up and brush with olive oil.
5. Spoon sour cream mixture into zucchini shells, dividing evenly between shells.
6. Sprinkle with cheese and bake at 400° for 3O minutes until cheese is melted. Serve warm!
