Southwest Stuffed Peppers
|1||Roasted Red Pepper Dip Mix|
|2 Tbs||olive oil|
|1 Lb||ground beef|
|8 oz||cream cheese|
|1 can||black beans, drained and rinsed|
|1 cup||shredded cheddar|
Preheat oven to 400°. Cut tops off and core peppers; set aside.
Meanwhile, in a large skillet over medium heat cook ground beef, breaking up meat with a spoon until no longer pink. Drain excess fat.
Return beef to skillet, then stir in cream cheese, corn, and beans. Add in Roasted Red Pepper Mix and stir untl well combined.
Arrange peppers cut side up in a 9"x9" baking dish and drizzle with oil. Spoon beef mixture into each pepper. Top with cheese and chopped parsley (optional), then cover baking dish with foil. Bake peppers until tender, about 35 minutes. Uncover and continue to bake until cheese is bubbly, about 10 minutes more.
