Baked Ranch Zucchini Fries
Ingredients
1 | Back at the Ranch Dip Mix |
2 | large zucchini |
1 cup | panko bread crumbs |
1 cup | grated parmesan |
3 | large eggs beaten |
1 Tbs | olive oil |
Directions
Line a large baking sheet with parchment paper and drizzle with olive oil.
Cut the zucchini into approximately 3" fries. Add the beaten eggs to a small bowl. In another dish (a loaf pan works well) combine the panko, parmesan, and Ranch Dip Mix.
Dip each fry into the egg and then the panko mixture. Place on pan leaving space between each piece. Drizzle with olive oil and bake in a 450° oven for 18-20 minutes or until golden and crispy. Serve immediately!
Tip: You can make these in the air fryer too. Cut baking time to approximately 10 minutes.
