Creamy Herb & White Bean Soup


1 Baked Potato Soup Mix
1 can White Beans, Drained
6 cups Water
1/2 lemon, juiced
1/4 cup chopped soft herbs such as dill, chive, and/or parsley


  1. Prepare soup with water as directed on packaging, adding a can of drained white beans halfway through cooking time.
  2. Once done simmering, stir in lemon.
  3. Add herbs to the top of each serving.

Optional: further garnish with crushed red pepper and a drizzle of extra virgin olive oil.
